Thai Turkey Meatballs
Ok, so there's nothing really authentically thai about this recipe, as in, I'm pretty sure I've never seen them on the menu in a thai restaurant. BUT the flavours are there, in a big way. These are extremely tasty and take literally no time to make. I brought these together for a weeknight dinner in about 30 mins - which included the time it takes to make the punchy, herby, oh so good dressing you can serve with them. { I apologize for my images in this post! I find it really

Butternut Squash Pasta
I was curious about exploring a squash type pasta dish as although I adore squash, I'm not a huge fan of a sweeter flavour profile with my pasta. However, I was pleasantly surprised by this dish! It was extremely easy to whip up on a weeknight, it's creamy and satisfying but you are getting a good dose of vitamins and nutrients in your sauce. Will it replace carbonara? Heck no. But it's a good dish on it's own, or as a side to a protein. I think the addition of the nutritiona

Khao Soi {Northern Thai Soup}
I'm all about "Sunday Soups". There's something deeply satisfying and comforting about digging into a hot bowl of nutritious, brothy goodness, winding down the weekend and re-setting for the week ahead. And I'll admit, it's often consumed on the sofa whilst enjoying some show I'm highly addicted to. Yes, I know - mindless munching in front of the TV is a no no, but sometimes my dear friends, it's allowed. This was my meal this past Sunday, but make no mistake, it's delicious

Sesame & Coconut Dressing
This dressing is everything. That's almost all I need to say about it.... but I'll continue. This is the kind of dressing that truly completes a salad or veggie bowl. It's satisfying and creamy, which always helps me feel that much more content with my meal. I honestly think I suffer food FOMO, I feel ripped off when I have an unsatisfying meal. But with this one in your rotation, you're guaranteed to feel as though your meal has done you a good service. Mission accomplished.

Thai Curry and Lentil Soup {Spicy}
Hot dang this soup is good. Not only because of it's Thai flavours, which are probably my favourite type, but because it has some depth to it, a little more robust flavour profile than a simple broth and coconut milk base. The good news it's it's dead simple to make and doesn't require a lot of ingredients. But I do think a high quality curry paste is a must - it absolutely sets the stage for the soup. Really, it's necessary for all the curry dishes you are making at home. I

Zesty Cabbage Rolls
The idea to first attempt cabbage rolls came when a friend mentioned they had started purchasing the sour cabbage from the grocery store. I'd always just passed it by, not even considering it. But why? I love sour foods, pickled foods, fermented foods - so off I went and I'm pretty darn happy I did! Not only did it help yield these delicious babies, but I also throw it in my soups and stirfrys. It's a winner. Having the sour cabbage makes this whole cabbage roll process so mu

Not Butter Chicken
Um ya. Butter chicken, or as I fondly call it, Buerre Poulet. (I know. Not proper French but it makes me smile) While I adore so many other (possibly more authentic) Indian dishes, this one is the top of the list. It's comforting, creamy, a little spicy, and all that sauce allows you mop it up with naan bread over and over. Winning! However, all that cream doesn't really sit well with me, or my stomach. Internally or love-handley. Sure, that's a word. This version is healthie

Creamy {Hubbard} Squash Soup
Soup season has officially arrived!! Although I may be somewhat (terribly) miffed that summer is over and an extremely cold winter is apparently upon us, I can at least drown my sorrows with a bowl and spoon. And if we're honest here, copious amounts of wine. Perhaps it's just the initial shock of summer ending that I have a knee jerk reaction to, and then settle in to cozy nights with warm soulful food, perfect slouchy socks, (OMG, have you seen these & these) burning firepl

Squash & Black Bean Tacos
Now these are something I feel really good about eating. They check 2 important boxes on the "what's for dinner list" - healthy and tasty! Give these meatless beauties a try before you knock them for the lack of ground beef or pulled pork, just once... and I promise you'll want to cook them again. They're also extremely quick to bring together which makes them a great option for the weeknight dinner. I feel like I repeat that statement a lot but quick, delicious week night di

Herb Packed Falafel
Falafel are such a great addition to a vegetarian meal; I love them. They are typically fried when you order them in a restaurant or sandwich bar ~ which obviously adds to the deliciousness of the little parcels. And while I'm all for indulging and occasionally eating some fried goods, I just can't go there with homemade falafel. It seems to defeat the purpose of making a delicious & healthy home-cooked meal. I do find they are somewhat hit and miss with home recipes. Either
