Soba Noodle Salad
I am over the moon I've finally made this salad - I'm obsessed! It's going into the summer rotation as a perfect lunch, or dinner and I guarantee you I'll be making it over and over again. I made it one evening for myself and my main squeeze's lunch - I got 6 texts the next day telling me how I'd knocked it out of the park with this one (one of the text's was even a GIF). Not meaning to gloat, just sayin' - this salad is insanely delish! The veggies I've chosen here are par

Asian Slaw Salad
I kid you not, this is up there with one of my favourite things to eat. There are pages and pages of different recipes for Asian Slaw and many of them are highly addictive. My obsession with "AS" started with my mum's Ichiban salad, which is also made frequently in my home and is always a hit at any pot luck or summer BBQ. Raw Ichiban noodles are a bit of an indulgence though, so this version a little on the lighter and nutritious side. I think one reason a slaw is so great

Warm Kale Salad with Brussels
The inspiration for this salad comes from many a dinners at good old Earls Tin Palace. ETP. I think they do a pretty great job at their dinner salads and the warm kale salad is no exception, but I prefer to munch on salad for dinner in the comfort and financial convenience of my home. When I'm out for food, I'd rather splurge on things I'm less inclined to make myself (read: treat myself to), and paying close to $20 for a salad is a little tough to swallow. ( Although I'll sp

Roasted Eggplant // Aubergine Salad
I wasn't entirely sure what I was planning when I came home with these 3 unique eggplants; they were just too pretty not to buy! There is the always the delicious baba ganoush but I felt if that were the dish I was going to make, I should have likely purchased 3 of the less exepensive purple FRUIT. Did you know that? I did not. It's prepared as vegetable, so that's what I consider it - despite it actually being a fruit. The Kitchn has a good little summary of the different va

Super Spring Salad
Lately, despite that warmer weather, I've been feeling a little bit uninspired. I haven't had my usual drive to create exciting and healthy meals. I've been opting for simplicity. Broth with veggies, or hummus and crackers, frozen (homemade) veggie burgers - now don't get me wrong - nothing is wrong with these food choices BUT the lazier I become, my food and excercise routine starts to slide too. I notice a lot more "treat" days and "one more handful won't hurt" thoughts . F

Kale & Brussels Sprout Salad {the best}
Anyone who has eaten at my house in 2015 has likely been served this salad; and anyone who eats at my house at any point in the future stands a good chance of having this on their plate. And you know what? Consider yourself lucky. This heaping bowl of cruciferous veg is nothing short of amazing. delicious. more-ish. filling. satisfying. The list goes on. I was lucky enough to be given the new Whitewater cookbook for Christmas. (close your eyes and pick a page from any of the

{Beautiful} Zucchini & Yam Veggie Bowl
This is a beautiful and simple dish. Actually, I'll let you in on a little secret - it's a salad. Plain and simple. But it's oh so much more than just a salad! There is something about eating a meal out of a bowl; it's just that much more comforting - think pasta, soups, stews, chilli - BOWLS! Also, there's a lot to be said for the love and prep work going into your food; I personally find this presentation much more appealing than diced up veggies over a pile of leaves and

Greek Quinoa Salad
I recently drove down to The Gorge in Washington for a weekend of festival fun – also known as Sasquatch! It’s such a fantastic weekend with awesome friends and music ~ but camping for 4 days can often lead to meal upon meal of burgers and sausages. While those are most definitely welcome and greatly appreciated, it is nice to have a few healthier things to munch on. I took down this quinoa salad, which helped me get some veggies and was also a good option for the 12 hour car
