{Beautiful} Zucchini & Yam Veggie Bowl

This is a beautiful and simple dish. Actually, I'll let you in on a little secret - it's a salad. Plain and simple. But it's oh so much more than just a salad!

There is something about eating a meal out of a bowl; it's just that much more comforting - think pasta, soups, stews, chilli - BOWLS! Also, there's a lot to be said for the love and prep work going into your food; I personally find this presentation much more appealing than diced up veggies over a pile of leaves and it just takes a few minutes longer. And ultimately yeilds LOADS more satisfaction. So you have a bowl, some veggies, a little TLC ~ almost there. The final step is, in my opinion, the star of this dish - the dressing. It isn't difficult. It isn't complicated or time consuming. It's just quite shocking that 4 simple ingredients can create such a delicious, rich, creamy and HEALTHY salad dressing. You'll be licking your bowl, I promise. And don't stop at salads, you'll likely using this a staple in your kitchen for a sauce over veggies, rice, sweet potato, and "veggie bowls".

Tahini is the main ingredient in the dressing and is a good item to keep in your pantry. It's rich in minerals and a great source of calcium. It's also high in protien; even higher than a majority of nuts. It's also easy for your body to digest. So my friends, it's not just for hummus, there are so many great ways and reasons to add it to your diet.

I will give you the ingredients I used for this particular bowl but it, quite literally, can be made with ANYTHING you fancy, and I'm sure you will be seeing loads of variations of this dish on F.E.D. ~ as it's a crowd pleaser.

A side note. I recently purchased a spiralizer for about $50 from amazon and it's a life changer in the kitchen. It so fun (nerd alert) and really makes vegetables that much more interesting. I think it has a large part to do with why I love these veggies bowls so much more now!

(serves 2)

INGREDIENTS:

- 2 large handfuls of mixed greens (I've used baby kale & spinach mix)

- 1 large carrot, spiralized or grated (or use a vegetable peeler to get long strands)

- 1 zucchini, spiralized or grated (or use a vegetable peeler to get long strands)

- 1 3" portion of cucumber, cut into matchstick pieces

- 10 cherry tomoatos, halved

- 1 small yam, diced and roasted at 375 for 20 minutes

- 1 cup rice, cooked (I've used forbidden rice, cooked with coconut water)

Assemble all ingredients into 2 large bowls .... and add dressing.

TAHINI MISO DRESSING:

- 1/4 cup tahini

- 1-2 tbs miso

- 1/2 tbs soy sauce, tamari or braggs

- 1/4 cup water or coconut water

- squeeze of lemon (optional)

Add all ingredients into a bowl and stir until combined. Add more water if it's too thick. You can keep this in the fridge for the week, but it thickens when stored, so you'll just need to add a bit of water to "loosen" it up again.
