Spinach & Avocado Toast
It's all about the simple pleasures right?
Well, this recipe, if you can even call it that, is utterly simple and oh so very pleasurable. In my humble opinion, anything with avocado is pretty darn satisfying. It adds life to salads, smoothies and sandwiches. And alhtough I do LOVE cheese, I find that this magical fruit is an equally satisifying addition, as it tends to my creamy cravings.
Avocados are extremely good for you. The list is long, but most importantly they load you up with necessary heart healthy fats. They are also high in potassium (more than bananas), and high in antioxidants. They also keep you feeling full and satisfied so you are less likely to snack on those tempting sugary sweets.
Spinach is the other star in this dish, along with garlic. No secrets here, both healthy, healing ingredients. Popeye's food of choice is loaded with vitamins, and a good source of fibre and iron. Side note: Do you ever get a "funky" feeling on your teeth after eating spinach? Well good news is, it's normal. This is from the oxalic acid in spinach, in short, these oxalate crystals leak out of the spinach and bind to your teeth. Crystals on my teeth?! Why not! Too bad they didn't leak diamonds. Anyways, this funky crystal feeling is lessened if spinach is cooked slightly. And not to worry, just becuase it contains acid it's still a fairly neutral vegetable, so it isn't damaging to your teeth.
This is a great way to start the day, or end it for that matter. If I'm alone for dinner and fancy something quick, I'll often have a bowl of soup and this.
(Makes 1 piece of toast)
- 1/2 ripe avocado (or less if you prefer)
- large handful of fresh spinach
- 1 clove garlic
- 1 tsp coconut oil
- 1 piece of bread (gluten free if you prefer)
- dried chili flakes (optional)
Heat the oil in a small frying pan on medium heat. Add the minced glove of garlic and saute for a few minutes, careful not to brown. Add the spinach and continue cooking for a few more minutes until wilted. Toast your bread and place the spinach garlic mixure on top. Mash the avocado onto the spinach. Salt and pepper to taste, and don't forget the chili flakes if you like a kick! I also enjoy a squeeze of lemon to add a little zest.
