Strawberry Chia Porridge

If you've looked up a breakfast recipe online in the last 6 months - you have likely come across either overnight oats or some form of chia pudding/porridge. Taking the nation by storm!! Ok, perhaps a little over dramatic ~ but the recipes are everywhere, and for good reason. These "breakfast pots" are simple, healthy, easy to throw together, and most importantly, delicious. The options are endless with regards to what goes in these, but as Strawberry season is upon us - this is the one I was craving.

Chia seeds are awesome and so easy to incorporate into your diet. They have a handful of great health benefits including a good source of fibre, protien and antixodiants. These little seeds absorb up to 12 times their weight when soaked in liquid, which is why they make such a great breakfast pudding/porridge/bowl. They expand into awesome little gooey parcels of breakfast perfection.

I'm really into Kefir at the moment. Yes, this is a fermented milk, and initially the idea does sound a bit, well....gross. But it's actually a really nice addition to smoothies, and breakfast bowls. I like to mix it with my almond milk for a little tartness. Kefir has a ton of good probiotic bacteria for your stomach ~ more so than yogurt, and the fermentation process also makes this dairy product almost lactose free, so much easier to digest. There's a lot of decent articles out there on Kefir, but here the Wiki link if you want a little overview. Adding kefir is completely optional... so I'll leave that entirely up to you.

Variety being the spice of life and all.... you can add nuts and seeds, dates, honey, all sorts of berries and fruits to your pots. Play with this constantly to keep you breaky interesting!

INGREDIENTS:

  • 3 tbs chia seeds

  • 1 cup almond milk (or 3/4 almond milk & 1/4 kefir)

  • dash of vanilla extract (or vanilla pod)

  • 8-10 strawberries

  • 1 tbs shredded coconut

Pour the almond milk/kefir into a blender and add 4 strawberries. Blend until smooth. Combine the chia seeds, strawberry milk, and vanilla into a bowl or mason jar. Stir until completely combine and leave to soak for at least 45 minutes, or overnight. Slice the remaining strawberries and place on your chia bowl, sprinkle with coconut. Enjoy!
