Cauliflower Fried "Rice" {with an egg}

I haven't always loved the cruciferous cauliflower; I wrote it off as a bit dull and really only thought of it as a vessel for cheese ~ however, over the last few years, this has changed. Roasted caulifower with cumin is one of my faves, and I am beginning to embrace "cauliflower rice". My only issue with it is that, simply put, I adore REAL rice; it's my favorite and could eat it at every meal - so substitutions fall short for me. BUT, if you think of it as it's own entity and not a substitution for something else (rice) then it's actually really quite good!

This is a quick dish. Easy to whip up on a week night with minimal prep. Any veggies you have in your fridge can be thrown in to this, use it as a side or the main feature. As always, it's YOUR meal.

There are many health benefits of cauliflower, some of which you can read about here. But if you want the short version? It's a vegetable which, in my humble opinion, is always a good thing to incorporate into your diet.

If you don't have any electrical unit to help blitz the cauliflower, no problem, you're not off the hook that easily! Just use your cheese grater, it's easy, quick and does the job. If you have a food processor, this works really well, and of course, everyone's favourite family member, the vitamix, will do the trick. However, make sure to process this in batches as if you over fill your machine of choice, it will almost liquify some of the cauliflower before getting to the chunks on top.

INGREDIENTS:

  • 1/2 - 1 cauliflower head (depending on how many you are feeding)

  • 5 mushrooms, sliced

  • 5-6 asparagus stalks, sliced

  • handful of cherry tomatoes, halved

  • 1 small onion, chopped

  • 2 stalks of celery, chopped

  • 2 cloves of garlic, crushed

  • *you can change qty's or choice of veggies

  • 1 egg per person

  • 1 tbs coconut oil

  • 1 tbs soy sauce

  • 2 tsp sesame oil

  • 2-3 tsp fish sauce, to taste

Blitz the cauliflower into rice like consistancy and put aside.

Heat oil in wok and add onions, stirring and tossing frequently for a few minutes. Add mushrooms, asparagus and garlic and continuously toss for a few minutes more. Add, cauliflower, tomatoes, celery, soy sauce, sesame oil and fish sauce. Continue to cook on high, stirring frequently. Taste as you go and add more sauces if needed. (I like mine salty!) Meanwhile, heat frying pan and fry eggs to your liking.

Plate the "rice" and place fried egg on top. Enjoy!
