Cauliflower Buffalo Bites
"Tasty little nuggets!". Yup, that's how my partner in crime describes these little flavour bombs - lovingly doused in a blanket of Franks Hot Sauce. Winning.

Will these be served during super bowl. Indeed. Will there still be beer, chips, guac, queso, cheezies and all things "terrible" and delicious. Most definitely. I think the trick here is not to tell people, (or yourself) they are replacing anything (ahem, chicken wings) but simply enjoy them for what they are! Okay, rewind. I suppose the premise for these is that they are in fact a healthier option to chicken wings.... but my point is that you can still partake in all those other items if you choose - these are just a tasty AND healthy snack in their own right. A nice addition to the mix, and perhaps, just perhaps, a welcome substitution to wings. Either way, I always feel better about indulging if I've managed to squeeze in some veggies.

Oh, and another thing... These are great any time of year - no need to wait for that spectacular Sunday where it's not only acceptable, but encouraged, to sip on some Buds all afternoon long.
You can skip the flour coating if you so desire - but it's a pretty easy step and I do think the hot sauce adheres to the cauliflower a much better. Plus, I've used chickpea flour which is gluten free, tasty, and unrefined - so pretty easy on the digestive system.

This is so tasty served with my Yogurt Ranch Dip!
INGREDIENTS:
1 head of cauliflower, cut into florets
1/4 cup chickpea flour (or any kind you desire)
1/3-1/2 cup of water
sprinkle of garlic powder
sprinkle of paprika
salt and pepper
1 tbs butter
1/4 cup of Franks Hot Sauce (or more)
Preheat the oven to 450 F and line a cookie sheet with parchment paper. Alternatively, put a cookie cooling rack on the cooking sheet. (this way any excess mixture will drip through) Cut the cauliflower in to bite sized florets. In a medium bowl mix flour, water, garlic powder, paprika, salt and pepper - combine until there are no lumps. I use my food.eaten.daily little mixer. Coat the florets in the flour mixture and spread them out on the cookie sheet. Cook for about 20 minutes until they are gently browning.
In a large microwavable bowl, melt the butter, then add the hot sauce and stir to combine. Remove the florets from the oven and toss in the hot sauce mixture. Then put them back on the cookie sheet and return to the oven for another 10-15 minutes until they start to brown.
Remove from the oven and serve - Enjoy!!
