Rainbow Chard & Kimchi

If you like a little spice and zest in your life then this side dish is for you! Full of nutrients, it's a fantastic side to any meal, or even great on top of rice on it's own.

Swiss Chard is fantastic as it's packed full of nutrients, taste's great, AND looks pretty. It contains a huge amount of Vitamin K in it which helps build strong bones & prevents heart disease, along with numerous other benefits. It also packs a good amount of Vitamin C, magnesium and potassium ... the list goes on.

And then there's Kimchi. Oh how I adore kimchi!! It's so delicious, refreshing, spicy and good for your gut. I love adding it to soups, salads or just having a little bit on the side of anything I eat. So to have it as the star (or best supporting actress) is right up my alley. Because it's fermented, it's full of great gut boosting probiotics. If you haven't tried it because you are afraid of fermented foods, trust me, you should really put your fears aside and get on board, you won't look back. Some good reading on Kimchi here.

INGREDIENT:

* serves 2 as a side

1 bunch of swiss chard, chopped

3/4 cup kimchi, chopped

1 large shallot, finely sliced

1-2 cloves garlic, minced

1/2 cup stock, chicken or veggie

pinch of salt

1 tbs ghee or butter & splash of oil for cooking

Heat the ghee/butter & oil up in a frying pan over medium heat. Add the shallot and a pinch of salt and cook for a few minutes. Add garlic and cook for a few minutes more. Pour in the the stock and as soon as it starts to bubble, add the chard. Keep stirring until it wilts down slightly and allow it to simmer for a few minutes until cooked. Turn the heat to low, and add the kimchi, stir to incorporate and slightly heat the kimchi, careful not to heat it too much as it will destroy the good probiotics. Serve with a protein and rice, or as a side to any dish you fancy!
